Meet Alyce: The Artist Behind the Cakes

If you’ve admired a wedding cake at Zingerman’s Cornman Farms and wondered, Who dreamed this up? — there’s a good chance the answer is Alyce.

Alyce leads the CAKE department at Zingerman’s Bakehouse, where she and her team create both everyday celebration cakes and fully custom wedding designs.

Her style? Artistic. Floral. Maybe a little moody.

But always intentional.

A Career Built on Craft

Alyce knew early on that Zingerman’s Bakehouse was where she wanted to land. Several of her culinary school instructors were former Bakehouse employees, and she was drawn to the bakery’s deep commitment to quality and service.

It took multiple applications — and a referral — before she was hired.

But once there, she knew she’d found her place.

It was the first bakery where she felt she could 100% stand behind both the product and the customer service. Her words: “Our pecan pie tastes exactly like my mom’s.”

Designing Beyond Cake Inspiration

When couples meet with Alyce, she doesn’t start with cake photos.

She starts with:

  • Flowers
  • Attire
  • Invitations
  • Room lighting
  • Overall vibe

She’s pulled inspiration from wallpaper, lace patterns, mehndi designs, and even table linens. She’s piped details based on a wedding dress. She’s incorporated proposal stories into decoration. She’s customized fillings inspired by cultural heritage and favorite cocktails.

And one thing consistently surprises couples?

She sketches their cake design on the spot.

That moment, when a vision becomes tangible, is often the first “wow.”

The Craft Behind the Beauty

What many couples don’t realize is how technical the process is.

Every layer of filling is measured.
Every tier is leveled and proportion-checked.
Decorators practice new techniques before using them on a wedding cake.

The team even makes their own fondant.

But for Alyce, technical precision is only half the equation. The other half is artistry and allowing space for small creative decisions in the moment.

“The cakes that aren’t overly prescribed often turn out the best,” she says. “They allow us to make those small decisions while decorating that take a cake from beautiful to ‘wow.’”

The gardens.

Cornman’s spaces are versatile enough to support light and airy celebrations or dark and moody affairs, and Alyce designs accordingly.

What She Wants Couples to Feel

Alyce doesn’t always get to see couples’ first reactions to their cakes.

But when she does?  “Their faces light up.”

That’s the goal.
